Lemon Cupcakes

I love anything lemony. That fresh, clean taste/scent. Yummy! I've done orange cupcakes before and last week I did a batch of lemon cupcakes (combining a few recipes I found online) and here how I made them...

Ingredients (approximately 12 medium cupcakes)

For cake
• 1 stick or 115g butter
• 1 cup (115g) sugar
• 1 1/4 cup self-raising flour
• 1 tsp baking powder
• 2 eggs
• 1 tsp vanilla essence
• 1 tbsp lemon juice

For icing
• 3/4 stick butter
• 1 tbsp lemon juice
• 1 tbsp lemon zest
• 1 tsp vanilla essence
• 2 cups icing sugar


1) Beat butter, sugar, eggs, vanilla extract well before adding in sifted flour and baking powder. Add in lemon juice.

2) Pour mixture into cupcake liners and bake at 180°C for 15 - 20 mins. Let cool before piping.

3) For icing, combine well butter, icing sugar, lemon juice & vanilla essence. Lemon zest can be added into the icing or sprinkle on after decorated with icing.
