Makes 12 cupcakes
Ingredients
Cake
1 1/4 cup cake flour
1/4 tsp salt
1/2 tbsp baking powder
Castor sugar
1/2 stick unsalted butter
2 egg whites
3/4 cup milk
1 tsp vanilla essence
125g strawberries (put aside 3 for decoration)
1/4 cup cocoa powder
A dash of lemon juice
Icing
1 stick unsalted butter
1 tbsp heavy cream
A pinch of salt
3 cups icing sugar
1 tbsp cocoa powder
A dash of lemon juice
Steps
1) Sift and whisk cake flour, baking powder & salt together.
2) Whisk egg whites until fluffy, add milk.
3) Beat butter, sugar & vanilla essence together then add in item 1 & 2. Combine well before splitting the mixture into 3 bowls.
4) Add cocoa powder into 1 bowl.
5) Add cut strawberries & a dash of lemon juice into another bowl. Mix well until turns light pink.
6) Pour 3 mixtures into cupcake liners. Get creative!
7) Bake at 180°C for 15 to 17 minutes.
8) To make the icing, beat softened butter until pale before adding heavy cream, icing sugar, salt & vanilla essence.
9) Split into 2 portions. Add a dash of lemon juice into one and cocoa powder in the other.
10) Wait for cupcakes to cool before frosting & topping the cake with cut strawberries~
